French toast pancakes with chocolate, strawberry, and mascarpone

Ingredients
Mascarpone cream
- 125 gram mascarpone
- 1 tablespoon granulated sugar
- small dash vanilla aroma
- 30 gram cream
Egg-milk mass and French toast
- 3 pieces Eggs
- 50 gram almond milk or regular milk
- 0,5 teaspoon cinnamon powder
- 2 tablespoons granulated sugar
- 3 thick slices brioche bread
- lump butter for baking
Chocolate sauce
- 100 gram dark chocolate finely chopped or grated
- 125 gram almond milk or regular milk
Other ingredients
- 4 great strawberries cut into thin round slices
- 1 banana peeled, halved in the long way and in the short way (so that you have 4 pieces.)
- 2 tablespoons cane sugar to caramelize the banana
- 1 tablespoon roasted almonds
- 3 leaves coin finely chopped
Instructions
- Cut the banana, strawberry and mint as described in the ingredients list.
- Place the banana on an oven tray and sprinkle the cane sugar over the flat side of the banana.
- Caramelize the banana with the gas burner until a golden brown color.
Mascarpone cream
- Mix all ingredients together with a whisk into a mass in a mixing bowl.
Chocolate sauce
- Heat the almond milk or milk and add the chocolate.
- Melt this together into a mass. Keep this warm until you are ready to finish the dish.
Insert and fry French toast
- Cut the brioche into thick slices.
- Open 3 eggs in a mixing bowl.
- Add the sugar, cinnamon powder and almond milk to the mixing bowl.
- Mix this together into an even mass with a whisk.
- Briefly place the brioche bread in the egg-milk mixture until slightly soggy.
- Place a frying pan over medium/high heat for the French toast.
- Melt the butter and then fry the French toast until golden brown on both sides in the pan.
Presentation of the dish
- Grab a nice plate to finish the French toast on.
- Spread the top of 2 French toast with the mascarpone cream.
- Place the strawberry slices on all three tops of the French toast.
- Now stack them on top of each other in the middle of the board. Make sure the French toast without mascarpone cream is on top.
- Place the caramelized banana on top of the dish. (if the bananas were large this may be too much, you can put something next to them or keep it separate)
- Pour the warm chocolate sauce over it.
- Now sprinkle the roasted almond and mint over it.
- TIP: Add extra chocolate curls on top, this makes the dish even more beautiful!
