Dat is wat je kunt verwachten met reverse sear gerookte bavette. Het komt uit de buikwand van de koe en is werkvlees. De koe heeft veel moeten werken om de organen in de buik te beschermen. Het is dooraderd met vet en bevat weinig bindweefsel. De vet dooradering zorgt ervoor dat dit vlees veel smaak heeft maar wel dun gesneden moet worden, anders kan het wat taai zijn.<\/p>\n\n\n\n<figure class=\"wp-block-image\" id=\"yui_3_17_2_1_1703088558429_87\"><img decoding=\"async\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/651c562ded27b566c53caf2d\/1696692374127-W0FNXNX166UJ9ZR02PB7\/image-asset.jpeg\" alt=\"grillen\" style=\"aspect-ratio:4\/3;object-fit:cover\"\/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Reverse sear, wat is dat?<\/strong><\/h2>\n\n\n\n<p>Reverse sear is een kookmethode die vaak wordt gebruikt bij de bereiding van steaks en andere vleesgerechten op de grill. Het omgekeerde aan &#8220;reverse&#8221; verwijst naar de volgorde van de stappen in vergelijking met de traditionele methode.Bij de traditionele methode wordt een steak eerst snel dichtgeschroeid op hoge hitte en vervolgens naar een minder hete zone verplaatst om verder te garen tot de gewenste gaarheid is bereikt. Dit kan leiden tot een goed gegaarde buitenkant maar een minder gelijkmatig gegaarde binnenkant.Bij de reverse sear-methode wordt het vlees eerst langzaam gegaard op een lagere temperatuur, meestal in de indirecte hittezone van de grill of in de oven, tot het dicht bij de gewenste gaarheid komt. Vervolgens wordt het vlees naar de hete zone van de grill verplaatst om snel te worden dichtgeschroeid om een mooie korst en smaakvolle grillmarkeringen te cre\u00ebren.<\/p>\n\n\n\n<p>De voordelen van de reverse sear-methode zijn dat het zorgt voor een gelijkmatigere garing van het vlees en dat de buitenkant niet te veel doorbakken wordt terwijl de binnenkant nog de gewenste gaarheid heeft. Hierdoor kun je een steak krijgen met een sappige, malse binnenkant en een knapperige, smaakvolle buitenkant.<\/p>\n\n\n\n<p>De reverse sear-methode kan worden toegepast op verschillende soorten vlees, waaronder bavette, ribeye, entrecote en meer, en het is populair onder grillliefhebbers die streven naar perfect gegaarde steaks. Het vergt wat geduld en zorgvuldige controle van de temperatuur, maar het resultaat is vaak de moeite waard voor diegenen die van sappig en smaakvol gegrild vlees houden.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Bereiding van de bavette<\/strong><\/h2>\n\n\n\n<p>We gaan deze bavette \u201dreverse sear\u201d bereiden, dat houdt in dat we hem eerst op een temperatuur van ongeveer 110 graden indirect gaan garen. Dit doen we tot een kern van 42 graden in het midden van het vlees. Uiteraard combineren we dit met een lekker blokje appelhout voor een extra intense smaak!&nbsp;<\/p>\n\n\n\n<p>Daarna gaan we de bavette op hoge temperatuur grillen. Dit doen we op een temperatuur van ongeveer 280\/300 graden celsius, tot een kerntemperatuur van 52 graden. Het vlees 5 tot 10 minuutjes laten rusten en eet smakelijk!<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n<div id=\"recipe\"><\/div><div
